Ideal as an appetizer paired with red wines

The term cacciatore or cacciatorino indicate small salami, characterized by a ruby red color with uniformly distributed grains of lard.
The name derives from the ancient custom of hunters carrying small salami with them in their bags.
Production of this salami began in the hilly areas of Lombardy and can be traced back to the time of the Lombard invasions.

Characteristics

They are made from lean pork, fat, salt, pepper and garlic. Wine, sugar, milk or caseinates can be added. The mixture is then stuffed into natural or artificial casings and left to mature for at least 10 days at a temperature between 10 to 15°C, to ensure preservation and wholesomeness under room temperature conditions.
They are sold commercially in bulk, either vacuum-packed or in a modified atmosphere. They keep well in cool, dry places and in the refrigerator for longer periods.
Pig farms must be in the territory of the following regions: Friuli-Venezia Giulia, Veneto, Lombardy, Piedmont, Emilia-Romagna, Umbria, Tuscany, Marche, Abruzzo, Lazio and Molise.
