Characteristics

It has a green colour with golden yellow tones and a fresh fruity smell, with herbaceous notes of artichoke and white fruit aromas. It has a clear olive flavour and a perfect harmony between bitter and spicy notes.
Seggiano DOP extra virgin olive oil is obtained from at least 85% Olivastra Seggianese cultivar olives. What distinguishes it from other oils is the presence of a maximum total acidity that doesn't exceed 0.50% and it has a long shelf life.

Its fragrance is particularly enhanced when used with fish, but also on leafy green salads, legumes, cooked vegetables, soups and pinzimonio. It has an interesting use in the preparation of mayonnaise and ice cream.
