The stretch of coastline from Rosignano Marittimo to Castagneto Carducci offers food and wine experiences for various tastes and all budgets! Taverns, restaurant-fisheries, intimate bars and cafés, large terraces overlooking the sea, small kiosks and renowned restaurants: here, tradition offers foods that were already found on Etruscan tables, alongside new recipes with original combinations.
Among the seafood dishes, there is the famous Cacciucco, a frugal soup made by sailors of Turkish origin, from the term "küçük" meaning small pieces of fish; then there are salted cod and mullet, the famous bonito, a delicious oily fish baked, grilled or cooked all'acqua pazza (poached in a herbed broth), octopus, stockfish and tonno “briao” (drunk tuna - tuna cooked in wine).
A rich culinary tradition complemented by excellent local wines, for both meals and desserts, and fine olive oil, the protagonists of the Etruscan Coast Wine and Olive Oil Trail, an itinerary taking you to wineries surrounded by green Mediterranean scrub with the blue sea in the background.
Agricultural products and local seafood specialties come together in a wealth of flavors to enjoy in traditional and gourmet restaurants. In the municipality’s various hamlets, food and wine events taking place during the summer enhance the typical cuisine of Rosignano Marittimo, one of the Tuscan Olive Oil Cities. Seafood cuisine takes center stage in events such as the Fish Festival in June and the Salted Cod and Stockfish Festival in July.
The name Cecina, probably of Etruscan origin (from the name of the noble Caecinia gens family), is not to be confused with Cecìna, a frugal Tuscan dish made with chickpea flour in Livorno, known as "torta," a typical street food that can be enjoyed by the slice in bakeries and pizzerias all along the coast. Summer events include the historic Mussel Festival, while in September Vino Marina brings a tasting of fine wines from the hills of Riparbella to the seafront, along with dishes made by local restaurateurs.
Bibbona is the area in which Terratico di Bibbona DOC wine is produced and it boasts a vine cultivation with very ancient origins. Wine and olive oil are among the local traditional agricultural products celebrated during the historic Fiera della Zootecnica (Livestock Fair) dedicated to the Chianina breed of cattle. For lovers of seafood cuisine, there is no shortage of seafood dishes, including traditional recipes and innovative combinations to enjoy at the small food establishments and in the renowned restaurants along the coast.
