Zuccherini from Vernio are delicious dry cakes which can be eaten either at breakfast time or as a snack. They go well with Vin Santo and vermouth. They are very popular in the town where they are produced and are typically eaten at weddings. They aren’t easy to make although here’s a recipe for those who’d like to have a go!
Ingredients
- 100g flour
- 8 eggs
- 80g butter
- 150g sugar
- 2 sachets of yeast
- 30g aniseed seeds
Method
Mix the flour, eggs, melted butter, sugar, yeast, the aniseed seed and a drop of aniseed liqueur. Make them into doughnut shapes and put them in the oven. In the meantime, dissolve 200g of sugar in a pan with a quarter pint of water. Dip the little cooked doughnuts into this mixture until each is covered with a white sugary crust. Leave to cool before eating.
